4 Healthy Salad Recipes for Weight Watchers

I love salads as they are so refreshing, crunchy, light, and easy to prepare.  Do you love salads like me?  When it comes to preparing various types of salads, you have to be creative in choosing the ingredients and the dressings.

Salads can be eaten at any time. You can eat it by itself or complement it with your main meal.

Salad No 1 – Potato Salad

Ingredients

4 medium boiled potatoes (cut into small cubes)

½ medium onion (finely chopped)

1 tablespoon spring onions (finely chopped)

½ green apple cubed (optional)

2 pinches of salt & white pepper

2 heaped tablespoon mayonnaise

1 teaspoon lemon juice

Method

1. In a bowl put in potatoes, onion, spring onion & apple. Now add salt & pepper.

2. Add mayonnaise to the above ingredients and finally add lemon juice.

3. Mix the salad well and refrigerate it for 30 minutes before serving. Done.

4. Enjoy your salad.

Salad No 2 – Indian Salad

 Ingredients

2 large lettuce leaves (tear it with your hand roughly)

1 medium onion (slice it vertically)

½ cucumber (slice into half circles)

1 medium tomato (cut into 10 slices)

¼ green and red capsicum (cut into small cubes)

1 teaspoon coriander leaves (finely chopped)

1 tablespoon lemon juice

¼ teaspoon salt

1/8 teaspoon roasted cumin powder

Method

1.  In a bowl put in lettuce leaves, onion, cucumber, tomato, capsicum, and coriander leaves. Now add in lemon juice, salt, and roasted cumin powder.

2. Give it a good mix and place it in the refrigerator for 30 minutes before serving.  Done.

3. Enjoy your salad. You may serve this salad with any type of biryanis, chapati, or naan.

Salad No 3 – Fruit Salad

Ingredients

½ red apple (cut into large cubes)

½ pear (cut into large cubes)

1 golden or green kiwi (cubed)

8 seedless grapes (cut into half)

4 strawberries (cut into quarters)

1 tablespoon olive oil

1 tablespoon lemon juice

1 pinch of salt

Method

1. In a bowl combine all fruits together.

2. Then add olive oil, salt, and lemon juice. 

3. Give it a good mix and place it in the refrigerator for 30 minutes before serving.  Done.

4. Enjoy your salad.  You can have it with your yogurt.

Salad No 4 – Chickpea Salad

Ingredients

1 ½  cup boiled chickpea

1 small onion (finely chopped)

½ small cucumber (chopped finely)

1 deseeded tomato (cut into small cubes)

1 tablespoon coriander leaves (finely chopped)

2 tablespoon olive oil

2 tablespoon lemon juice

¼ teaspoon salt

¼ teaspoon black pepper

¼ teaspoon chat masala (optional)

Method

1In a bowl combine chickpea, onion, cucumber, tomato, coriander leaves together.

2. Then add olive oil, salt, lemon juice, black pepper, and chat masala. 

3. Give it a good mix and place it in the refrigerator for 30 minutes before serving.  Done.

4. Enjoy your salad.  You can have it with your potato cutlets or samosas.

Note:  Chickpeas are boiled and are available in cans. You can find it on the supermarket shelves.

Final thoughts:

You don’t need any special occasion to make salads at home.  Salads can be made and enjoyed daily.  Make it part of your daily diet.  Salads contain lots of Vitamin A, Vitamin C, potassium, and fibre.  Try the above salads and you will be amazed with the taste!!
